Chalmers Greco
Our Greco is a wine of presence and detail, with generous and intense aromas of apple, vanilla bean, brioche and a flint edge, its a wine that can be paired with more robust fish and white meat dishes. With a coiled complex palate, it shows apple and white stone fruits, some sweet cooking spices all riding high on chalk like freshness to perfectly balance its personality.
Hailing from the southern region of Campania in Italy, Greco was included in our second tranche of imports in 2002. We immediately saw its potential to retain naturally high acid levels in warm to hot regions like Heathcote, making it a perfect addition to our sustainable farming approach and gentle hand philosophy in the winery requiring no additions. Given its natural make up, we also learned that it benefits with some gentle relaxing in old oak barrels and develops more complex layer with time in bottle.
Chalmers Greco is hand picked usually towards the later end of the season for white wines allowing flavours to develop and concentrate while retaining freshness and not letting the sugars run away. It is whole bunch pressed and wild fermented in tank and then moved to old French oak to mature on fine lees for up to 10 months. It’s a wine that will further develop in the bottle and reward those who are happy to wait, it’s a style in the Chalmers range, unlike Vermentino or Falanghina that are fresh and bright, is more in vein to richer white wine for the serious wine connoisseur.
